About Chef
Chef
Papa's love of fine food and passion for creating a wonderful dining experience
began when he was 15, and was hired to work in the kitchen of a classic French
restaurant in New Jersey.
A
graduate of the renowned New England
Culinary Institute, where he had enrolled
on the advice of Georges Perrier, for whom he
then worked, Mr. Papa became head chef of Le
Delice in Morristown, NJ, at only 23. He
received glowing praise from the New York
Times
for his imaginative and wonderfully executed menu there.
He served as Executive Chef
at both The Hideaway and
Aldar, elevating both restaurants to a
new level, before finding the 211 York
property in 1998. Here he has turned the
dream of his own fine restaurant into a reality for all to enjoy.
